These wonderful green pancakes get their colour thanks to sizeable dose of spinach. They work great as lunch and breakfast. You can serve them sweet or with savoury additions.
The prepared green spinach pancakes are sweet with honey and fruit, in gluten-free and lactose-free version. Thanks to their unique colour, they are also great way to smuggle a bit of veggies/greens for our kids.
Ingredients for ca. 20 small pancakes:
- 2 handfuls of fresh spinach
- 1 banana
- 2 eggs
- Half a glass of oat milk (make sure the milk is gluten-free)
- Half a glass of millet or rice flour
- 2 spoons of powdered sugar
- 1 spoon of vanilla extract
- Half a spoon of baking soda
- Pinch of salt
Additionally:
- Honey for glazing the pancakes
- Strawberries, bilberries or other fruits you prefer
Preparation:
Put all ingredients into food processor and blend it into a smooth paste. The paste should have watery consistency.
Heat up your AMT frying pan. Lower the burner’s power. Do not use oil. Pour the paste directly onto the pan, to make small pancakes.
The pan shouldn’t be too hot, so that the pancakes don’t coagulate, fry too quickly and lose their green colour.
When bubbles appear on pancakes’ surface, it’s time to turn them over to the other side. Fry them a bit longer and take them off the pan.
The pancakes should be light and fluffy.
Place the finished pancakes one on top of the other. Glaze them with honey. Decorate with mint leaves, strawberries, bilberries or other fruit.
